This simple, thin, Mexican flour pancake is the starting point for a
huge number of Mexican dishes, as so many are built around the concept
of a spicy filling in a wrap. Some of the better known examples are
quesadillas, chimichangas, fajitas, enchiladas, tacos and burritos. The
word tortilla is also used for a Spanish omelette of egg, potato and
onion.
